Granny Love's Chocolate Marshmallow Cookies

This recipe is super yummy (when frozen) and super easy! But trust me when I say freezing is a requirement for the best tasting cookie possible. It is from Jordan's Great Grandma.

Cookie:

1 Chocolate Cake Mix

¼ c. Water

2 Eggs

1 Bag Large Marshmallows (Jet Puffs work best, they tend to keep their shape better than others but other brands work just as well)

Preheat oven to 350 degrees.

Mix cake mix, water, and eggs. Scoop one inch balls onto a cookie sheet layered with a piece of parchment paper–VERY important.

Cook for 7-8 minutes, pull out of oven and place a marshmallow on top of each cookie pressing it into the cookie. Cook for another 2 minutes. Remove from oven and flatten the marshmallows with the back of your spatula.

Stick warm cookies in freezer while preparing the frosting. (I keep my cookies in the freezer for 15 minutes or until they lift easily off the parchment paper)


Frosting:

4 c. Powder Sugar

4 T Butter

Milk –enough to get the frosting to a spreadable consistency but not runny

1 Pkg of Nestles Pre Melted Unsweetened Chocolate (This should be in your baking isle.)

Mix together until smooth. Spread on the tops of your cookies covering the marshmallows. Put cookies in a airtight container and keep in your freezer for the best result. (They taste better frozen) Enjoy!

They are WAY yummy! But like it says, you have to eat them frozen. Let me know how you liked them if you make them! It is funny because I am one out of two Love Family in laws that like these cookies, all the other in laws can't stand them! But come on, chocolate, marshmallow and more chocolate? How can you go wrong?
