I just came across a great, easy recipe for mini-meatloaves. This sounds like a much easier route if I don't have enough time (or ingredients) to do my stuffed meatloaf.
Mini Meatloaves
Makes 6 servings
Ingredients
1 teaspoon vegetable oil
3/4 cup chopped onions
1 1/4 pounds lean ground beef (about 85 percent lean)
1/2 cup Italian seasoned dry bread crumbs
1/2 cup roasted garlic pasta sauce
1 egg, lightly beaten
3/4 teaspoon salt
Instructions
Preheat oven to 375 degrees. Spray 6 muffin cups with nonstick cooking spray.
In a small skillet, heat the oil over medium heat and sauté the onion until tender, about 3 to 4 minutes. Set aside to cool.
In a medium bowl combine the ground beef, bread crumbs, pasta sauce, egg, salt and cooled onions. Using clean hands, mix until well-combined.
Divide the meat mixture into 6 equal portions and press into 6 prepared muffin cups, shaping a smooth, rounded top on each mini meatloaf. If your muffin pan holds more than 6 muffins, fill the remaining empty cups with water. Bake for about 25 minutes or until an instant-read or meat thermometer inserted into the center of a mini meatloaf reads 160 degrees. Remove from oven and let stand for 5 minutes before serving.

I've made something similar to these, and it was pretty good. Good old beef. It's what's for dinner.
