I got this recipe from my good friend at work who lived in Taiwan for a few months. She made them today for an activity at our work, and they were tasty. She used ground turkey instead of ground pork, which I liked, but she said you could use either one or even ground beef.
I still want you all to post all of your good Chinese food recipes, though, so that I can have a variety of recipes to choose from. Just thought I'd share this one with y'all.
Chinese Pot Stickers
Makes 64 potstickers
2 c. cabbage, finely chopped
1 tsp. salt
1 lb lean ground pork
2 Tbsp. light soy sauce
2 Tbsp. rice vinegar
2 Tbsp. green onion, chopped
1 Tbsp. cilantro, minced
1 Tbsp. sesame oil
2 tsp. fresh ginger, chopped
2 garlic cloves, minced
64 wonton wrappers (about 1 pkg)
1/4 c. vegetable oil
1 c. chicken stock
1. Sprinkle salt over the cabbage and let stand for five minutes, then squeeze out any liquid
2. Mix cabbage, pork, soy sauce, vinegar, onion, cilantro, oil, ginger and garlic (filling can be mixed and refrigerated for up to 6 hours in advance).
3. On each wrapper, (keep them covered with a damp cloth so they do not dry out) place about 2 tsp. of the mix and seal the edges, using a bit of water. Try to press out all the air and ensure that they are tightly sealed (At this point, if you want to, you can freeze them individually on a cookie sheet and place them in a plastic bag. They will keep for a month. Defrost in fridge before continuing).
4. In a large skillet, heat 1 Tbsp oil. Fry about 16 dumplings for 1 minute or until golden on one side. Add 1/4 c. of stock into the pan, reduce heat to low, cover and cook without turning for about 7 minutes or until the dumpling is translucent and most of the liquid has evaporated. Uncover and cook on medium/high heat for another 5-7 minutes or until the bottoms are dark brown. Drain, put on a platter and keep warm.
5. Repeat for the remaining dumplings.
Dipping Sauce
2 Tbsp. light soy sauce
1 Tbsp. rice vinegar
1 tsp. fresh ginger, minced
Mix ingredients together and serve in small bowl.
