Since my tastebuds have matured, and I willingly eat beans nowadays, I think perhaps I'll give this recipe a whirl one of these nights:
Black Bean Enchiladas
Makes 6 servings
Ingredients
1/2 cup vegetable oil
12 corn tortillas
About 1 1/2 cups store-bought salsa verde or green enchilada sauce
3 cups store-bought vegetarian black bean chili (we used two 15-ounce cans of Amy's brand)
4 ounces Monterey jack or pepper jack cheese, shredded (about 1 cup)
Sprigs of fresh cilantro (garnish)
Salsa picante (optional garnish)
Instructions
Heat the oil in a large skillet until a tortilla will sizzle when it is put in. Lightly fry the tortillas on each side, about 20 to 30 seconds, not so long that they become crisp, and set them on paper towels to drain.
Preheat oven to 400 degrees. Oil a 9-by-13-inch baking pan. Spread 1/2 cup of sauce over the bottom. Set aside another 1/2 cup or so of sauce. Coat each tortilla on both sides with the sauce; put 1/4 cup of chili and a couple tablespoons of cheese in a strip down the middle of the tortilla and roll the tortilla around the filling. Place enchiladas seam side down in the baking pan in a single layer. When they are all assembled, brush the tops with the remaining sauce.
Bake the enchiladas until heated through, 15 to 20 minutes. Garnish with sprigs of cilantro and serve with the salsa picante, if desired.

Three thumbs up!! We just had this for dinner and it really was good. I used flour tortillas instead of corn, since that's what I had on hand. I cut the recipe in half, using 1 can of chili (found in the nutrition/vegetarian section) and 1 can of green enchilada sauce. Just brush the sauce on the tortilla first and then pour whatever is left over the whole batch. Oh, and I would lightly grease the sides of the baking dish next time. Good, good, good!
Ok, these were SOOOOOOOO scrumptious and delish!! I know what I'm having for lunch tomorrow! My personal preference would be to sprinkle the top with more cheese... I think these would be a hit at Mona's house too!
